The Origin of Our Oil
In Morocco, olive oil is more than an ingredient. It is part of daily life pressed fresh, shared often, and trusted for its health benefits.
Our oil comes from ancient groves at the foothills of the Atlas Mountains, where olives are harvested early and cold-pressed within hours. This is where Ardor Oro begins: with intensely fresh olives, naturally rich in polyphenols, and an oil known for its vibrant bitterness, subtle fruitiness, and signature peppery finish the true markers of high antioxidant content.
Our founders grew up with this kind of olive oil. Not the flat, over processed bottles found on most supermarket shelves, but oil that was alive with flavor and valued for its role in supporting heart health, reducing inflammation, and protecting the body at a cellular level.
When they searched for the same quality abroad, they found oils stripped of character and stripped of their nutritional power.
Ardor Oro was created to change that.
By working directly with small Moroccan farmers and using small batch production, early harvest methods, and cold extraction, we preserve what matters most: purity, potency, and proven health benefits.

From Our Groves to Your Kitchen
Each 500 ml bottle of Ardor Oro contains the concentrated essence of approximately 5 kilograms (11 lb) of early-harvest Moroccan olives.
Our olives are grown in the
sun-rich regions near the Atlas Mountains and harvested while still green the stage at which polyphenol levels are at their peak. Early harvest means lower yield, but dramatically higher nutritional value.
These olives are cold pressed within hours of picking, using mechanical extraction only. No heat. No chemicals. No shortcuts.
The result is a small amount of intensely concentrated oil, naturally reaching 1,450 mg/kg of polyphenols a level associated with powerful antioxidant activity, cellular protection, and daily cardiovascular support.

The Process
Ardor Oro began with a simple idea: olive oil should be judged by what it does for your health.
Our journey started with small family groves in Morocco, where olive oil has long been valued not only for its taste, but for its role in daily wellbeing. What began as sourcing exceptional oil for friends and family quickly revealed a larger problem — most oils on the market were diluted by late harvesting, industrial processing, and lost nutritional value.
We chose a different path.
Today, we work with a small network of independent Moroccan farmers who share our standards: early harvesting, organic practices, and cold extraction only. Every partner is selected for one reason their ability to produce olives rich in polyphenols and uncompromising in quality.
By keeping our supply chain short and transparent, we protect what matters most: potency, purity, and consistency.

Our Farms
Ardor Oro olive oil is produced exclusively from carefully selected Moroccan olive varieties, grown in the foothills of the Atlas Mountains.
What makes these olives exceptional is not only the cultivar, but the environment in which they grow. Our trees take root in dry, rocky terrain and mineral-rich soils, where water is scarce and conditions are demanding. This natural stress forces the trees to grow slowly and develop deep root systems, drawing concentrated nutrients from the soil.
The result is a smaller yield, but far greater potency. These olives produce oil naturally rich in polyphenols reaching 1,450 mg/kg powerful antioxidants responsible for both the distinctive peppery finish and the clinically relevant health benefits, including cellular protection and cardiovascular support.

Our Testing
We analyze each production batch for:
